The main agricultural products are grapes, wine, oil, cheese, honey, citrus and quinces. Local products are handmade "Makarouna", Trigona (triangles), Sisamomeli (sweet, made from sesame and honey served in weddings), the kolokythoupoulia, the girls (Triangle chortopites), the lamb stuffed with gruel in xylofourno, the myzithropites, the baklava.


The traditional "koulloyria" oven with branches from the forest used as bread and bid for the memory of the dead, kneading bread for each eclesiastic fair. Equipment folklore in Karpathos: dishes, stivania, textiles and bakiria.


At Olympus, there are still traditional ypodimatopia making stivania and slippers with traditional patterns and laboratories working with traditional weaving of wool. In Karpathos there are still manufacturers karpathikis named Lyra, and the laoutoy TSABOUNA.
